My company is new to SharePoint and we're getting the pieces put together to do a deployment. I'm looking for comments suggestions for what our setup should look like.

Here are the our primary uses for SharePoint
3. Document Management
We have <1 TB of data that will be migrated from current file shares into SharePoint.
My plan is to run this config in a virtual environment (VMware 4.x). Just a little about the hardware purchased. HP DL385 G6 with 32GB of MEM. Two Cybernetic 12T storage devices. We currently have two other VMware hosts. ESX
4.x with two Sun NAS heads. Each with 1.5TB of disk.
I also, unless someone has a strong compelling reason not to, plan to run the SharePoint 2010 install and MS SQL on the same VM.
I would welcome any comments or suggestions.
